Kingfish Ceviche in Green Water

- For the Pickled Muntries, place ingredients, except muntries, into a small saucepan and bring to the boil. Simmer for 1 minute then remove from the heat and set aside to cool for 2 minutes.
- Pour over muntries, cover and set aside in the fridge. Drain well to serve.
- For the Green Water, place ingredients into a food processor and blend until smooth. Season to taste. Strain through a fine sieve into jug and set aside.
- To serve, thinly slice kingfish and arrange to one side of each serving bowl. Sprinkle with pepperberry salt and top with pickled muntries. Garnish with lemon balm, star fruit slices and pour green water into bowls to finish.
