  • Marinate fish in kiwi fruit puree and lemongrass for 20-30 minutes. Wipe marinade off fish and wrap tightly with cling film. Refrigerate until required.
  • For green curry dressing, chop all ingredients roughly and blend in food processor until smooth. Add a little water if too thick, but add sparingly. Adjust to taste.
  • For salad, mix all ingredients together in a bowl and toss with enough dressing to lightly coat.
  • To serve, slice salmon into 0.5cm slices and arrange on serving plate, top with salad, a little extra dressing and drizzle with coconut cream.
