Special Fried Rice with Marinated Pork

- Preheat oven to 200C.
- Place the pork and char sui marinade in a bowl and stir to coat. Transfer pork to a paper lined baking tray and place in the oven until cooked through, about 15-20 minutes. Remove from oven and set aside.
- Add vegetable oil to a wok and place over high heat. Add the ginger and prawn and cook until just under cooked. Remove from wok and set aside.
- Add chicken to the wok and cook until browned. Remove from wok and set aside.
- Place eggs, mirin and soy sauce in a bowl and whisk to combine. Pour into the hot wok, cook, swirling the wok, until just set. Remove from wok and thinly slice. Set aside.
- Add more vegetable oil to the wok. Add rice and stir, add corn, prawns, pork and snow peas and stir for a few minutes. Add more soy sauce, to taste.
- Serve garnished with spring onions and chilli.
