- Preheat oven to 240oC fan forced.
- For the Marinated Beef, trim fat from beef and place into a shallow tray.
- Combine marinade ingredients in a small food processor and blend until smooth. Pour over beef and set aside to marinate for at least 1 hour.
- Heat an ovenproof frypan over medium high heat. Drain beef and sear on all sides. Cook in oven for 10-12 minutes or until the internal temperature reaches 44C.
- Remove from the oven and set aside to rest and cool. Slice thinly when ready to serve.
- For the Salad Dressing, combine ingredients in a food processor and process until smooth. Set aside in the fridge.
- To assemble, combine salad ingredients in a bowl. Add beef slices and ¾ cup of salad dressing. Toss gently to combine. Add more dressing to taste. Pile into serving bowls and garnish with roasted peanuts and fried shallots.
