Thyme, Lemon and Vanilla Apple Crumble

- Melt the butter in a large frying pan over medium heat. Add the thyme and vanilla bean and seeds and cook for 2 mins, stirring, to infuse the butter with the aromatics. Increase the heat to high add the apples and cook, tossing regularly, for 5 minutes. Add the cinnamon and nutmeg and cook for 1−2 minutes until aromatic. Pour in 60 ml water, reduce the heat to medium and cook for a further 5−6 minutes, stirring regularly, until the apples start to soften. Remove from the heat.
- Lightly grease a 28cm x 18cm baking dish with butter. Spoon in the apples and scatter over the sugar and lemon rind. Set aside for 20 minutes to cool.
- Preheat the oven to 190°.
- Combine the crumble ingredients in a bowl and, using your finger tips, rub the butter into the mixture until it resembles coarse crumbs. Spread the mixture evenly on top of the apples. Transfer the dish to the oven and bake for 20−25 minutes until golden.
- Serve warm with ice cream.
